Is it possible (and if so, how?) to make custom data fields use the values of other data fields for calculations?

For example, could I create a field that uses a Terrestrials´ Radius and Water/Ice Index values to calculate a world´s land area?

No, its an interesting idea (something that was considered for v3), but it doesnt support calculations like that. You'd need to write a script to cycle through the bodies in question and add a 'custom field' to them. From there, you can define that field in the system data display, and it will show up.
